Alcohol is a fermented drink that contains ethanol, the active chemical in the liquid. The fermentation process breaks down grains, fruits, or vegetables. The length of the fermentation process determines the level of alcohol in a drink- the longer it ferments, the higher the alcohol content. Removing some of the water increases the level of alcohol in the liquid; these alcoholic beverages are called spirits.
